Position: Head Chef Cuisine: Fast-food Burgers Salary: Based on experience Location: Muscat, Oman. Experience in fast-food background and kitchen management and leadership skills are a must. Candidate Profile Strong experience in kitchen management and food production for outlets English is a must. Proven ability to develop and implement menus and standard kitchen production procedures Strong working knowledge of food safety, operational procedures, and recipe standardization Responsibilities • Directs kitchen production, including food preparation, kitchen crewing and cleanup • Maintains kitchen organization, staff ability, and training opportunities • Maintains control of the outlets kitchens and production kitchen to ensure that all tasks are carried out efficiently and effectively • Provides guidance to kitchen staff members, including, but not limited, to line cooking, food preparation, and presentation • Hires, trains and evaluate new kitchen employees to restaurant standards • Has excellent knowledge of menu creation and implementation whilst maintaining quality and controlling costs • Able to estimate the daily production needs and checking the quality of raw and cooked food products to ensure that standards are met • Ensures highest levels of guest satisfaction, quality, operating and food costs on an ongoing basis • Has knowledge of all standard procedures and policies pertaining to food preparation, receiving, storage and sanitation • Is fully aware of all menu items, their recipes, methods of production, preparation and presentation standards • Follows good preservation standards for the proper handling of all food products at the right temperature • Checks periodically expiry dates and proper storage of food items in the section • Responsible for training and mentoring all the kitchen staff • Responsible for the kitchen equipment and utensils, and maintenance of all kitchen areas • Follow up for all the maintenance issues related to the kitchen and outlets BOH areas • Estimating and managing daily production needs and checking the quality of the food products • Ordering and receiving food from the supplier/warehouse and checking their labels/quality/quantity • Following up with the team and ensure they are following the right use record for preparation of food • Daily feedback collection and reporting of issues as they arise • Ensuring that the preparation and presentation of food are of the highest quality at all times • Maintaining and updating supplier information such as qualifications, delivery times, product ranges, etc. • Observation for the inventory of outlets at the end of each month • Creating a positive environment in kitchen branches • Following up the hygiene of the kitchen team in each branch • Plans new menu items for all food outlets and prepare the cost, recipes and SOP’s before executing. • Develops an effective strategy to minimize the food waste • Hold kitchen team meetings to communicate kitchen, production and menu related issues and announcements • Develops standard recipes and techniques for food preparation • Keeping track of costs, adjusting recipe and following SOPSs for entire restaurant menu • Carries kitchen inspections and spot checks on frequent basis • Carries out any other duties as required by the Management
